Generous gourmet dining inspired by the regional and local cuisines of France

Inspired by the surrounding countryside, our Chef Antoine Gras draws from the resources of the Alps to devise his dishes. Lakes, alpine meadows, mountains… All environments that inspire him each and every day to transpose his love of this region into his dishes. His cuisine is generous and refined. Among other dishes, you can rediscover the great classics of Savoie cuisine such as the Fera, a fish caught in Lake Geneva, or the Crozet, which he combines with high-quality produce creating perfect associations full of flavour. In the kitchens of Antoine Gras, particular attention is paid to the work on sauces, which he uses to bring out the very best of the products on his menu. Read his story as you peruse his dishes.

Antoine Gras

At 30, Antoine Gras is the promising young chef at Les Barmes de l’Ours. Originally from the Auvergne region, his curiosity led him to the kitchen, and it was passion and rigour that led him to the helm of the Barmes kitchens.
